Oh Look, New Cheeses!

Look what flew in to Will Rogers last night!

Fromager D’Affinois– If you like rich and creamy, say FRO MAH ZHAY! Ultrafiltration a process which removes water from milk before cheese production, leaves lots of nutrients in along with fat making this creamier than Brie. The flavor’s subdued, but the texture is unctuous.

Monte Enebro –A true handmade Spanish original. This complex goat cheese is made from pasteurized milk and is inoculated with the same mold used to make Roquefort, which adds to its complexity and distinctive appearance. As it ages, the texture becomes denser with a more intense, pungent finish.

White Stilton with Mango and Ginger – White Stilton, a mild, crumbly cheese, hosts a party with guest Mango on the couch and guest Ginger dancing on the coffee table.

Huntsman – The two English cheeses Stilton and Double Gloucester are combined in alternating layers, with mild cheddary Double Gloucester on the top and bottom and strong Stilton in the middle. Beautiful on the snack tray!

Robiola Rocchetta- A blend of cow’s, sheep’s, and goat’s milk, this cheese has a creamy texture and smooth mouth feel. It comes from the Piedmont region of Italy.

Stilton With Lemon- Pair the nice, clean taste of a white Stilton with the citric tang of lemon for a sweet sharp taste.

Grana Padano– An Italian grating cheese. Like Parmiggiano-Reggiano, but more muted flavor and more for the buck. Padano means from the Po river region.

Vella Mezzo Secco -A slightly younger Dry Jack. Slightly firm and wetter than Dry Jack, the rind is rubbed with black pepper and olive oil to complement the complex flavors

    Fromager D’Affinois!!! This stuff in INCREDIBLE spread on a baguette with a nice Beaujolais Nouveau. The saliva won’t stop – still!
